Chili-Lime Chicken & Mango Skewers
Ingredients:
- 1/3 cup of Tuscan olive oil
- 1/4 cup of white balsamic vinegar
- 2 lime, juiced
- 1 teaspoon chili powder
- 1/4 teaspoon of cayenne pepper
- 1/2 of a red onion, diced
- 1 clove of garlic, minced
- Salt and freshly ground black pepper to taste
- 5 skinless and boneless chicken breast halves
- 2 large ripe mangoes
- Wooden skewersInstructions
- Combine olive oil, vinegar, lime juice, salt, pepper, chopped onion, garlic, chili powder, and cayenne pepper in a large bowl and whisk until all ingredients are thoroughly mixed together
- Cut chicken into 1 1/2 inch cubes and place into the same bowl as marinade
- Cover and marinate in the refrigerator for 1-2 hours
- Cut mangoes into 1 1/2 inch cubes
- Soak wooden skewers in water for at least 30 minutes
- Pre-heat grill to medium heat
- Thread chicken and mangoes onto skewers
- Spray cooking spray on a paper towel and rub onto the grill grates
- Grill skewers for 4-5 minutes on each side or until chicken is cooked
